Ingredients:
1 Package – Trader Joes Whole Grain Pizza Dough
1 LB – Low Fat Shredded Mozzarella cheese
4 – Mushrooms Sliced
1 – Steak Tomato Sliced
4 – Stocks of Fresh whole leaf Basil
1/4 – Red Onion
4 Slices – Roasted White Meat Chicken
1 Handful – Whole Leaf Baby Spinach
2 Cloves – Fresh Garlic
1 Sm Can – Tomato Sauce
Salt
Pepper
Balsamic Vinaigrette
Sauce:
Finely dice 2 stocks of fresh basil, 2 fresh garlic cloves and 1/8 of an onion. Simmer this on low heat until aromatic then add the tomato sauce. Simmer together for about 5 minutes adding salt and pepper to taste.
Roasted Tomatoes:
Preheat your oven to 400 degrees
Thinly slice a single steak tomato. Lay the tomato out in a sheet on a foil lined baking sheet that has been liberally oiled with olive oil. Drizzle balsamic vinaigrette and olive oil over tomatoes slices then salt and pepper. Place in the oven to bake for at least 15 minutes (20 recommended for good caramelization)
Pizza:
Preheat your oven to 475 degrees placing your favorite pizza stone or a baking sheet on the middle rack to warm with the oven.
Let your dough rest out of the fridge for 30 minute before putting together. During this time roughly dice your remaining fresh basil and red onion. Slice your whole mushrooms and cube your slices of roasted white meat chicken. When the dough is ready place it on a flowered piece of parchment paper, flower your hands and start pushing to dough out to a 12″ round. Once starting to flatten pick up dough and using your hands like hooks circle the edge until desired size and thickness.
Once dough is adequately thin and round(ish) spoon your sauce onto your dough and spread with the back of a spoon. Next take your roasted tomatoes and layer them on top of the sauce. After your tomatoes start lay down a layer of mushrooms and sprinkle your chicken, basil and onion. Next sprinkle your mozzarella cheese across the top the toppings until you can not see any of them. Put your spinach on top of this then sprinkle some Feta and Parmesan cheese on top of that.
Take completely prepped pizza with the parchment underneath and place it in your oven on top of the hot pizza stone or baking sheet for 12 minutes (sea level) You may need to adjust baking time for elevation.
