Dinner – Tadka Dal Chicken with CauliMash & Soycutash

INGREDIENTS:
4 pc – Boneless Skinless Chicken Breast
~1/8 Cup – Apple Cider Vinegar
4TBSP – Olive Oil
1 Package – Trader Joes Tadka Dal Sauce
1/2 Package – Trader Joes Cauliflower Mash (Frozen)
1/4 Package – Trader Joes Soycutash
1 – Garlic Clove
1 pinch – Shredded Sharp Cheddar Cheese
2 TBSP Milk
2 TBSP Butter or Margarine
Salt
Pepper

INSTRUCTIONS:

Place boneless skinless chicken breasts in a bag or bowl with olive oil, salt, pepper, apple cider vinegar.  Let sit in the fridge overnight to brine.

After brine, cut chicken into 1/2 inch pieces and fry adding extra salt and pepper to taste and set aside.  In a small microwave safe bowl put Soycatash and butter/margerine with 2TBSP Water, Microwave 2 minutes 30 seconds covered.  In a small sauce pan place Cauliflower Mash pucks, and Milk.  Cook until softened and warmed then add garlic and cheese.  Once sides are cooked re-warm the chicken and add Tadka Dal sauce to combine and heat through.
